Some say the secret of the Cuban cuisine is found in the Mojo Criollo, a natural sauce made with oil, garlic, onion, spices such as oregano and bitter orange or lime juice. The Mojo is used when preparing the meats to cook. The meats are usually doused with Mojo for a day or more in advance, so by the time they are cooked, a rich flavor gets imprinted and makes them be marinated much better and faster. There are many varieties of Mojo, but it’s the Cuban version that’s stolen the heart of people around the globe because the earthy background it gives the food.

It is known to Cubans and all over the world as Arroz con Gris (Spanish for Black Beans and Rice). The name recalls Spanish history, when rice was introduced to Cuban after Christopher Columbus discovered the island and it was mixed with the native Frijoles Negros (black Beans), that when simmered together, makes one of the most staple dishes of Cuban cooking.

Cubans who immigrated to the United States have established Cuban cuisine as a very widespread and exceptional fare in the country. Being very affordable and delectable, Cuban food restaurants are mostly re-visited by customers and very adequately for lunch, specially if you are living in cities close to the ocean because, usually the setting and decoration of the venues convey a message of being in the Caribbean.
