But we locals are very fond of this area too, mainly because of the island’s water sports activities and excellent seafood restaurants, many with stunning waterfront views.
This stretch of Florida has always been more than just a geographical location to me—it’s a living, breathing narrative of connection, a coastline I’ve known and loved my entire life.
In May, the Amrit Ocean Resort opened its doors in Singer Island as a next-generation destination spa that redefines luxury wellness. It uniquely blends Eastern and Western wellness philosophies, emphasizing mindfulness, nutrition, fitness, relaxation, and sleep. As a devoted brunch enthusiast, I was eager to experience Sunday brunch at Amrit’s wellness-focused restaurant, TULĀ. This restaurant concept combines nutrient-rich, vegetable-forward cuisine with breathtaking ocean views.
I arrived at TULĀ at 12:30 p.m., following a peaceful morning at a local church service. The greeting from my host, Sebastiaan Gorissen, the Director of Outlets, set the tone for the impeccable service that would follow. Hailing from Holland, Sebastiaan radiates knowledge and warmth, reflecting the elegance and attentiveness you’d expect from a resort of this caliber. From presenting the menu to explaining the dining concept, Sebastiaan’s approach was meticulous and inviting.
The name TULĀ means “balance” in Sanskrit, a fitting reflection of the restaurant’s ethos. The menu, inspired by the cuisines of the Blue Zones and local Floridian ingredients, follows the 70/30 principle: 70% plant-based dishes and 30% animal protein. This philosophy seamlessly integrates wellness into indulgence, offering diners a nourishing and delectable meal.
Guests can choose between indoor dining with panoramic ocean views or the terrace, where the rhythm of the waves creates a soothing backdrop. A native Floridian, I found the crisp day a bit chilly, so my wife and I opted for the cozy comfort of the restaurant’s interior. The floor-to-ceiling windows ensured we didn’t miss the stunning waterfront vista, and the indoor ambiance felt as indulgent as the promise of the menu.
The à la carte menu appeals to diverse palates while staying true to its wellness-focused roots. The offerings range from vibrant cold-pressed juice blends and creative brunch cocktails to indulgent entrées and desserts. We began with drinks that captured TULĀ’s innovative spirit. I chose the turmeric carrot pressed juice, a delightful concoction, while my wife enjoyed a Peachy Bellini because she loves prosecco.
For entrées, my wife selected the Cheese Fondue—a rich dish featuring bacon crumbles over soft eggs. Because she prefers fried eggs, the kitchen graciously accommodated her request, maintaining the dish’s integrity and taste. For me, the Multigrain Avocado Toast was a standout. The pickled tomatoes, quinoa popcorn, and a subtle hint of Greek yogurt elevated this staple to something extraordinary. I also ordered the Tofu Scramble, a delicious vegan option that left me feeling nourished and satisfied.
As we waited for dessert, Sebastiaan joined us briefly, offering a deeper glimpse into the essence of Amrit Ocean Resort. “Our wellness center was designed in collaboration with the world’s leading health innovators and the Himalayan Institute,” he explained, his tone brimming with pride. “The Himalayan Institute is recognized globally as the foremost authority on holistic health. Together, they’ve created a mind-body wellness center here at Amrit that offers the most groundbreaking and sophisticated therapies and treatments in the world.”
Sebastiaan’s passion for the resort’s mission was evident as he continued. “It’s all about giving guests more than relaxation—it’s about creating a path to lasting vitality and balance. Everything here, from the spa therapies to the cuisine, reflects that vision.”
His words stayed with me as we enjoyed our desserts. My chocolate avocado mousse offered a creamy, velvety sweetness, while my wife’s pistachio baklava balanced nutty and citrusy notes. Naturally, we ended up sharing bites of both—a delightful conclusion to a remarkable meal.
What sets TULĀ apart from other brunch spots is the pace and atmosphere. The dining experience is unhurried, encouraging relaxed conversation, quiet moments of ocean-gazing, and savoring every bite. It’s a refreshing change from the rushed nature of many brunch outings.
The holistic ethos of Amrit Ocean Resort extends beyond the dining room. After brunch, we explored the resort, wandering through the pool area and the terrace, which descends to the beach via a grand staircase. Along the way, we admired the works of Austrian-born artist Rene von Richthofen, whose thought-provoking pieces tackle social and cultural issues. The art provided a poignant counterpoint to the serene luxury of our surroundings.
Before departing, a kind staff member offered to take a photo of us—a perfect memento of a perfect day. We left with plans to return, enticed by TULĀ’s themed dinners and wine pairings as part of their Uncorked Events series.
